Cold Cuts
Our cold cuts are delicious for one simple reason: even though lamb is the prince of the local gastronomy, we cannot forget the fact that for ages pigs were the main source of meat, since it provided food for the family throughout the year.
An old saying goes “no part of the pig goes wasted.” Today our flavor artists manage to balance innovation and tradition in farming and cold cut production. The outcome is extremely high quality products, that do not need to cover or alter flavors, because they are good just the way they are.
Some of our musts are “fegatazzi”, liver sausages (spleen, lungs, side and jowls, seasoned with salt, pepper and hot pepper), and the so called “crazy sausages”, made of a bit of everything. |
